Kashmiri Baigan

Ingredients
oil- 2 tbsp
Brinjal /Egg plant (small)- 4-5
Yogurt/Curd - 1 cup
Turmeric  1tsp
Dry Ginger - 1 tsp
Red chilli powder - 1tsp
Hing / Asafoetida- 1 pinch

Dry masala
Fennel seed - 1 tsp
Cardomom seed - 2
cumin seeds - 1 tsp

Coriander (chopped fine) for garnishing

Preparation

Cut Brinjals in small rounds
Shallo Fry in batches
Fry till the brinjals are golden brown
Remove and soak oil in titchen towel
Roast and grind all dry masalas
Add all masala in curd and mix

Heat remaining oil in a pan
Add hing
Add the fried brinjals
Add Curd to it and Mix
Add Coriander for garnishing
Cook for 10 minutes and serve with roti
